Apple Cheese Cake

I've been craving for Apple Cheesecake for so long... I missed my ex-boss, Kak Zue's Apple Cheese Cake actually... She has this wonderful cheese cake that you can't resist.
Tried asking her for the recipe...Alhamdulillah...she's willing to share.... and I've made it....
Gave some to Kak Zue...she said nice...good...but it's a bit dry huhuhu... and pleaseee she said do not put whipped cream on top coz the feel of eating the cheesecake vanished! O dear.. hahahaa... ok sifu... thank you so much for the compliment and comments... semangat nak buat lagi ni....

Apple CheeseCake


210 gms plain flour
70 gms caster sugar
130 gms butter

1. Mix flour and caster sugar and rub in butter
2. Line an 8” tin fully around sides and bottom; greased.
3. Heat oven to 180C
4. Loosely press mixture evenly around base and bake for 15 – 20 mins or until light brown.
5. Remove from oven and let cool ; reduce oven temp to 160 C

½ cup chopped walnut
2 nos green apple – deskinned and slice
1 tbsp caster sugar
1 tbsp butter
½ tbsp lemon juice
¼ tsp cinnamon powder
¼ tsp nutmeg powder
1 ½ tbsp raisins
1 tbsp cornflour dissolve in ½ cup plain water

Melt butter in saucepan: add next 7 ingredients ; then thicken with cornflour mixture.
Place evenly on baked base.

250 gms softened cream cheese

30 gms whipping cream (Emborg)
2 nos egg yolks only
30 gms caster sugar
¼ tsp salt
25 gms cornflour

Whisk 2 eggwhites with 50 gms caster sugar
Mix (B) together until smooth
Beat Cream cheese in mixer
Add (B) and mix well
Then add whisked egg whites in 2 parts in one circular motion clockwise,
Mix well ; Pour on top of apple slices on base; smooth out top and bake in oven for 30- 40 mins until golden brown on top.
Let cool ; Once cooled glaze top with apricot glazing gel.
